Sweet Corn Salad
1/2 cup chopped fresh cilantro
3 tablespoons fresh lime juice
1 teaspoon kosher salt
1/2 teaspoon black pepper
2 tablespoons olive oil
4 cups fresh corn kernels
1 cup thinly sliced radishes
1 cup cherry tomatoes halves
1/3 to 1/2 cup crumbled Cotija cheese ( or feta cheese).
1 ) Combine first four ingredients and whisk in olive oil.
2) Stir together corn, radishes and tomatoes in a medium bowl. Gently stir in dressing spoon mixture onto a serving platter, and sprinkle with cheese.

Rum Baked Beans
Rum Baked Beans
6 thick cut bacon slices chopped
1 cup chopped sweet onions
2 garlic cloves, minced
1(28)ounce canned baked beans with bacon and brown sugar
1(16)ounce can of navy beans, drained and rinsed
1(16)ounce can dark red kidney beans, drained and rinsed
1(16)can light red kidney beans, drained and rinsed
1(15) ounce can black beans, drained and rinsed
1/2 cup packed dark brown sugar
1/2 cup ketchup
1/2 cup gold rum
1/4 cup apple cider vinegar
1) preheat oven to 350°. Cook bacon in a large skillet over medium heat until crisp, remove, reserving 2 tablespoon drippings in skillet. Add onion and cook stirring often, until tender, about five minutes, add garlic and cook one minute.
2)stir together bacon, onion mixture, baked beans, and next eight ingredients in a large bowl. Spoon into a lightly greased 13 x 9" baking pan.
3)bake covered with aluminum foil for 30 minutes, uncover and bake 30 more minutes.
Makes 10 servings.

Okra and Tomatoes
6 pieces of bacon
1 ½ lbs okra
1 Vidalia onion
2 ears corn
4 medium tomatoes, peeled and chopped or 1 large can of whole tomatoes drained
salt
pepper
Cook the bacon in a cast iron skillet until crisp. Removing from all the bacon. It drain all but 2 tablespoons of bacon fat from the skillet. Cook the onion in the reserve bacon fat over medium heat until tender stirring constantly. Had the okra. Cook for five minutes. Cut the corn from the cob and add to the skillet. Add the tomatoes salt and pepper. Simmer for 15 minutes. Add the bacon. If it seems too sour from the acidic tomatoes add a teaspoon of sugar. 6 to 8 servings.
