Garlic Cheese Grits Casserole
6 cups chicken stock
2 cups grits
1/2 cup butter, cut into pieces
Three eggs, beaten
1 pound of sharp cheddar cheese, grated
1 to 3 cloves garlic, minced
Cayenne pepper to taste
Bring the stock to boil in a large sauce pan. Reduce heat and stir in the grinch gradually with a fork. Cook until all the liquid is absorbed. Stir in the butter gradually. Add the eggs cheese garlic and cayenne carefully and mix gently. Salt to taste. Pour into a greased 2 1/2 quart casserole. Bake at 350° for one hour and 20 minutes.
