Have a great recipe? This page is dedicated to readers who want to post a recipe for others or if you want to save a recipe so you won't lose it. Curried Chicken Salad




1 quart bite-size pieces cooked chicken breast, (or turkey) (you can use rotisserie chicken)
1 8 or 10 ounce canned water chestnuts drained and sliced
1 pound seedless green grapes washed and stemmed
1 cup sliced celery
1 cup toasted slivered almonds
1 1/2 cups Duke's mayonnaise
2 teaspoons mild curry powder
1 tablespoon soy sauce
1 tablespoon lemon juice
Lettuce leaves for serving

Combine chicken, water chestnuts, grapes, and celery. Mix mayonnaise with curry powder, soy sauce and lemon juice. Combined the chicken mixture with the dressing and chill for several hours. Top with almonds at serving time. May be served on a bed of lettuce.

Note: I am sold on Dukes mayonnaise , which you can get at Amazon. It is a southern mayonnaise which is far better than anything we can get around here.
