Irish Soda Bread
3 cups all-purpose flour
3 teaspoons baking powder
1 tablespoon sugar
1/4 teaspoon salt
1 teaspoon shortening (soften)
Combine first four ingredients. Mix in the shortening with a fork.
1/4 teaspoon baking soda
1/2 teaspoon baking powder
2 cups buttermilk (room temperature)
1 egg, slightly beaten
Add soda and baking powder to the buttermilk. Add egg and mix This will bubble. Add milk mixture to the dry ingredients and mix.
1/2 to 3/4 cups Craisins
1 teaspoon caraway seeds
Fold the Craisins and caraway seed into bread mixture. Slightly grease a 10 inch cast iron skillet. Bake at 375 degrees for 25 to 35 minutes. Toward the end of cooking time rub butter on top of bread to give it a golden brown look.
